Recipe of the Week-Caesar Salad

This is one of our favorite salads. I know what you're saying..."Yuck, anchovies?!?" You don't taste the anchovies. I promise. And I hate anchovies! They just add a dimension and saltiness you can't really substitute. This is a restaurant quality salad dressing that will enliven any meal. And, the best part? It only takes about 5 minutes to whip up!

Caesar Salad
  • 3 cloves Garlic, minced
  • 3/4 C Mayonnaise 
  • 1 teaspoon Anchovy Paste (found in the condiment section of the grocery store)
  • 1/2 C grated Parmesan Cheese, divided
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Dijon or Spicy Brown Mustard
  • 1 tablespoon Lemon Juice
  • Store-bought or homemade Croutons
  • Salt and Freshly Ground Pepper to Taste
  • 1 head Romaine Lettuce, rinsed and dried and torn into small pieces
    • Combine minced garlic with mayonnaise, anchovy paste, 1/4 C of the parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt, if desired. Refrigerate until ready to use. 
    • To serve, toss lettuce with dressing, and top with remaining parmesan cheese, freshly ground pepper, and store-bought or homemade croutons. Serve and enjoy. And admit you don't taste the anchovies.
