Leftovers Done Right...Chicken Pitas

One of my favorite things about summer is grilling. And one of the best parts of grilling is having delicious leftovers!

This Chicken Pita recipe uses leftover chicken to make a simple and light summer meal. Serve with a pasta salad and some fruit for a full meal!

Leftover Chicken Pitas
makes 6 Pitas
-3 C Leftover Shredded Chicken
-1/2 cucumber sliced
-1/4 red onion sliced
-1/2 head romaine lettuce, washed and torn
-1 tomato sliced or chopped
-1 avocado, sliced
-Tzatziki Sauce storebought or homemade (or thin some plain greek yogurt with water and add some minced garlic and some dried dill)
-Feta Cheese
-6 pieces Pita bread or Flatbread

To assemble sandwich, add 1/2 C shredded chicken to center of each pita or flatbread. Top with cucumber, onion, lettuce, tomato, avocado, and feta. Drizzle with Tzatziki or thinned greek yogurt. Serve and enjoy!
