Caesar Salad
- 3 cloves Garlic, minced
- 3/4 C Mayonnaise
- 1 teaspoon Anchovy Paste (found in the condiment section of the grocery store)
- 1/2 C grated Parmesan Cheese, divided
- 1 teaspoon Worcestershire Sauce
- 1 teaspoon Dijon or Spicy Brown Mustard
- 1 tablespoon Lemon Juice
- Store-bought or homemade Croutons
- Salt and Freshly Ground Pepper to Taste
- 1 head Romaine Lettuce, rinsed and dried and torn into small pieces
- Combine minced garlic with mayonnaise, anchovy paste, 1/4 C of the parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt, if desired. Refrigerate until ready to use.
- To serve, toss lettuce with dressing, and top with remaining parmesan cheese, freshly ground pepper, and store-bought or homemade croutons. Serve and enjoy. And admit you don't taste the anchovies.
